Argentina – Roast
In Argentina, “Asado” is short for a hearty barbecue gathering where various meats are grilled over an open fire. The tradition evolved from the days of the gauchos or cowboys roaming the country’s vast plains. Utilizing farm animals, gauchos would set up an iron grill, known as a parilla, next to a wood fire. Woods from woods that did not contain particularly strong-smelling resins or that had been heavily smoked were typically chosen for fire. Meat includes cuts of organs such as beef, pork, chorizo, blood sausages (morcilla) and even fudge. More tender cuts that require less time to grill are first served with provoleta cheese. The feast is accompanied by wine or mate, like a series of lighter garnishes.

Saudi Arabia — Kabsa
Like the Qatari Majboos, Kabsa is a rice and meat dish reminiscent of biryani. Meat – chicken, fish, lamb, beef or camel – is seasoned, then cooked in an underground oven or barbecued on hot stones set on embers or (as is more customary for the contemporary cook) in a pressure cooker. Rice is enriched by adding spices (pepper, cardamom, bay leaf and others) and dried fruits. Kabsa is served with daqqus, a rich and spicy tomato sauce.
Mexico – Mole
Tacos, tortillas, enchiladas: Given the popularity of these Mexican dishes and TexMex varieties like burritos, it may seem odd that the country’s national dish is something entirely different. Yet the Mole represents Mexico in myriad ways, especially where Spanish and indigenous influences converge. Mole, which is a sauce with 25-40 ingredients and takes four hours to prepare, is the dish of special occasions. Which explains its status as a Cinco de Mayo staple.
Depending on the ingredients used, the flavor profile of Mole ranges from sweet and hot to simply spicy. Mole Poblano (from Puebla region) contains chocolate, banana, tortilla, bread, nuts and many different spices. Mole Verde contains all kinds of green vegetables, including zucchini and peas. Originating in the Oaxaca region, Mole Negro includes four types of peppers, burnt tortillas, bananas and pumpkin seeds. You also have the Mole Almendrado, where the star ingredient is almonds.
Poland – Bigos
Bigos, a meaty stew with everything from rabbit and turkey to venison, has one essential ingredient: Polish sausage. The reason why the dish is called Bigos, meaning ‘hunter’s stew’, becomes clear when you see the game meat put in it. Meat is typically cut into small pieces and roasted before being added to the crock pot. Flavor and body are added to Bigos with sauerkraut, fresh white cabbage (shredded), spices, various vegetables, mushrooms, and sometimes wine.
Most cooks claim that the flavor of Bigos only improves with time, so it is recommended to prepare a pot a few days before you plan to serve it. Reheating the stew for an hour each day until eating is another recommendation from the best Bigos makers. Beer and bread are Bigos’ best accomplices.

France – Casserole
Pot-au-Feu, pronounced ‘Poto-feh’, literally means “pot on fire.” This is because the meat for this casserole dish is cooked over a slow fire for several hours. Often times, Pot-au-Feu can lather all day while the ingredients are brewed in a flavorful broth. One might wonder why a country with the most delicate and delectable culinary inventions (including croissants, pancakes, and more) and also considered synonymous with high-quality food elevates something seemingly humble and down-to-earth. stew as the national dish.
The answer lies in the fact that Pot-au-Feu is food for the rich as well as the poor in France. The story is set in the 1600s by the French monarch IV. Henry declared that he wanted every villager in the country to be able to have “chicken in the pot” at least once a week. Although chicken was perhaps rarer to find, the villagers consumed salted pork. Meanwhile, the lower classes in French cities could buy cheap pieces of meat. Pot-au-Feu was the ideal recipe for both such proteins.
Now, beef is the meat of choice. Root vegetables, charred onions, and any cartilaginous meat — marrow or oxtail — make up the base of the stew. The bone marrow/oxtail gives its gelatins to the broth, which gives it a jelly-like consistency.
Australia – Roast Lamb

Denmark – Roast Pork

Tunisia – Couscous (Kostsi)
Due to its geography, Tunisian cuisine is mainly based on seafood, meat, olive oil, tomatoes and spices such as cumin, coriander and red pepper. Due to the liberal use of the spice known as harissa (garlic, cayenne pepper, seasonings), the food here tends to be more spicy than in other North African countries. However, the national dish is couscous – semolina granules. Couscous is served with meat and vegetables seasoned with harissa. It is cooked in a bain-marie style pot: Meat (lamb, chicken, fish) and vegetables are cooked with spices on the bottom of the pot. The steam from the meat and vegetables rises to the perforated upper floor of the pot. This upper level is covered with herbs and Couscous. While serving, the couscous is spooned onto a plate and piles of vegetables and meat are placed on it.

7 soft tortillas
1 tablespoon of oil (peanut/olive/sunflower)
1 teaspoon smoked paprika, plus extra for serving
2 red peppers, halved and seeds removed
400g canned kidney beans, drained and rinsed
A bunch of parsley, very finely chopped
50 g yoghurt
1 jalapeño, thinly sliced
For the salsa:
4 spring onions, thinly sliced
4 medium tomatoes, cored and finely chopped
1 small avocado, peeled, seeded and chopped
Small bunch of coriander, finely chopped
1 small clove of garlic, finely grated
1 lime, peeled and juiced
1 tablespoon of oil (peanut/olive/sunflower)
Method
STEP 01
Preheat the oven to 180 degrees C. Cut each of the bread into 8-10 triangles and spread on two large baking sheets. Drizzle with oil and sprinkle with paprika. Bake for 7-8 minutes until golden brown and leave to cool.
STEP 02
Grill the peppers, skin side up, for 7-10 minutes, until they are charred and tender. Let it cool down. Peel and discard the skins, slice into strips and toss with the beans and parsley.
STEP 03
Combine the ingredients to make the salsa. Place the nachos on a large plate, top with the bean mix, salsa, yogurt, and jalapeno, and sprinkle with some paprika to serve.
